🍷 Today’s Wine Wednesday brings together a fusion of cultures and techniques, creating an explosion of flavors! Presented as an appetizer we have our Confit Chicken tossed in Adobo Sauce + Blistered Shishito Peppers + Pickled Fresno Chili + Cilantro.

The rich adobo and wonderful spicy notes of the dish call for a big, chewy wine with little to no tannin, low acid, rich fruit and residual sugar. The 2021 Gamba, Russian River Valley, Zinfandel checks all the boxes and wonderfully balances the richness and spice. This wine shows notes of late season plum and dark berries, with subtle notes of cracked black pepper, and cocoa. The cocoa finish really embellishes the complexity of the adobo.
